APRICOT & PINE NUT STUFFING
Put a cup of crumbs in a bowl. Add 1 egg, salt and 1/2 cup of warm water. Leave to sit for a minute for crumbs to soak up water. Chop fresh herbs and add a handful of dried chopped apricots and pine nuts. You could also add some basil pesto or similar. Mix well and stuff your chicken or turkey. As you can see, this is so easy and you can add really anything you fancy to create a delicious stuffing. I also like to roll the stuffing into small balls and put in roasting pan along with veges to make tasty dumplings.
