Onion & Date Herb Stuffing

Ingredients
1 small onion, finely chopped
4-5 teaspoons olive oil
2 cups Bakeworks breadcrumbs
1/2 teaspoon dried mixed herbs
1/2 cup dried dates, chopped
salt and pepper

Method:
Heat the oil in a pan and sauté the onion for 5 minutes until softened. Mix with the breadcrumbs, herbs and dates. Season.
Transfer to an ovenproof dish and bake in a preheated oven for 15-20 minutes until tinged golden. Serve with the roast of your choice.
You could use many other combinations of ingredients, for example, Cranberries & Walnuts (1/2 cup of each) or Fresh Sage, Pinenuts &  Dried Apricots.

Bubble 'n' Squeak

Ingredients
1kg potatoes - peeled and diced
2 Tblspn butter/spread/olive oil
250g frozen peas, corn and carrot
2 cups finely shredded cabbage
4 spring onions
1/4 cup Bakeworks breadcrumbs
1 cup grated cheese
Olive Oil Spray

Method:
Boil potatoes until tender, drain.  Mash roughly with butter.

Add vegetables to potatoes.  Stir to combine.  Mix in bread crumbs & cheese.
Heat a large frying pan over a medium heat.  Spray with oil.  Shape into 6 patties and fry in batches until golden, turning halfway through.  Serve immediately.
